The following definitions are specified in the classification of olive oil and olive-pomace oil:

Virgin olive oil is the oil obtained from the fruit of the olive tree solely by mechanical or other physical means under conditions, particularly thermal conditions, that do not lead to alterations in the oil, and which have not undergone any treatment other than washing, transferring, and filtering. Virgin olive oil fit for consumption as is (i.e. “natural”) includes:

1- Extra virgin olive oil: Jordan’s Treasure Extra Virgin Olive Oil, is ideal for adding to your home cooked meals, baking dessert and splashing some on salads. It is also great to dip with bread with a little bit of balsamic vinegar.

Its oleic acidic level is not more than 1 gram per 100 grams, thus making Jordan’s Treasure’s Extra Virgin Olive Oil the prime choice for great olive oil taste.

2- Fine virgin olive oil: Virgin olive oil that is of high quality and has been traditionally used for everyday kitchen use, but is a more cost effective virgin olive oil than E.V.O.O.

Tabbouli

Ingredients:
- 1 cup of burgul (cracked wheat, fine or medium)
- 2 tomatoes, diced
- 2 cups of boiling water
- 1 bunch of scallions (or green onions), chopped
- 1 package of Italian parsley
- Chopped mint

Dressing:
- Juice of 2 lemons
- 2 tablespoons of Jordan’s Treasure Extra Virgin Olive Oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of cracked pepper
- 1/4 teaspoon of ground cumin

Preparation:
1. Soak the burgul in boiling water for an hour.
2. Combine the burgul, tomatoes, scallions, chopped mint and 1/2 package of Italian parsley in a medium bowl.
3. In a small bowl, stir the dressing ingredients and 1/2 package of chopped Italian parsley.
4. Pour dressing over medium bowl, one hour before serving.

 

 
 

 

Garlic, Thyme, and Rosemary Roasted Potatoes

Ingredients:
- 3 tablespoons of Jordan’s Treasure Extra Virgin Olive Oil
- 2 unpeeled garlic cloves (For garlic lovers, the cloves can be peeled, crushed and minced)
- 2 pounds of small-unpeeled potatoes,
- Sea salt (to taste)
- 3 to 4 sprigs of fresh rosemary
- 3 to 4 sprigs of fresh thyme or lemon thyme


Preparation:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic, potatoes, salt, and the sprigs of herbs.
3. Cook for approximately 20 minutes, while turning the potato mixture with a wooden spoon, until potatoes are uniformly browned and almost done.
4. Reduce the heat to medium, cover the skillet and cook for an additional 5 minutes.
5. Uncover and cook for 2 more minutes or until soft when pierced with a knife.

 
 

 

Chicken Kebab

Ingredients:
- 2 pounds skinless and boneless chicken breasts cut into cubes
- 2 medium onions cut into sections for the kebab skewers
- 2 sweet green peppers, seeded and cut into squares
- 12 cherry tomatoes
- 1/2 cup Jordan’s Treasure Extra Virgin Olive Oil
- 1 garlic clove, minced
- Juice of 2 lemons
- 1 and 1/2 tablespoons of dried rigani (Greek oregano)
- 1/2 teaspoon of sugar
- Sea salt
- Freshly ground black pepper

Preparation:
1. To make the marinade, combine the minced garlic, lemon juice, rigani, and sugar in a bowl.
2. Whisk the ingredients together while slowly pouring the olive oil in a thin stream into the bowl.
3. Season to taste with salt and pepper.
4. In a separate bowl, combine the chicken cubes and enough of the marinade to completely coat the chicken.
5. Cover and refrigerate for at least six hours.
6. Reserve the remaining marinade to baste the vegetables and the chicken on the grill.
7. Prepare the barbecue grill.
8. Soak long wooden skewers in water for about 20 minutes.
9. Remove the chicken from the refrigerator and allow it to return to room temperature.
10. Thread the chicken cubes, peppers, onions, and tomatoes, alternately on the skewers.
11. Brush the grill rack with Jordan’s Treasure Extra Virgin Olive Oil before placing the kebabs on the grill.
12. Cook the kebabs, while basting and turning them frequently until done.
13. Serve immediately.

Approximately 2/3 to 4 ½ gallons of oil per tree.


Are the olives picked when they are green?

No, for oil the best maturity stage for ripe fruit flavor and good keeping quality is as the fruit is turning from yellow/green to purple on the outside skin and before the pulp turns black. Table olives are picked green and firm. But olives are also picked at all the other stages of ripeness depending on your desired style of oil.


Is the pit crushed as well?


Yes. Traditionally the entire fruit is crushed.


What is an extra virgin olive oil?

Extra virgin olive oil is obtained from the fruit of the tree solely by mechanical or other physical means under conditions that do not lead to deterioration of the oil.

No chemicals or extreme heat may be used during the extraction process.

Extra virgin olive oil must pass a wide range of chemical tests, including a maximum acidity, in terms of oleic free fatty acid, of not more than 1 % and a peroxide value of less than 20 meq O2/kg. In addition, it must be judged defect-free with some olive fruitiness, determined through a blind sensory evaluation by a trained tasting panel. What does "COLD PRESSING" mean ?

There is no legal requirement as far as the temperature is concerned, nor is there a method of checking what temperature an oil has been extracted at. In 2003 an EC regulation will come into force (EC Reg. No. 1019/2002 of 13/06/2002) that as an optional indication permits, if proven, the underlining of "cold extracted" and "cold pressed", respectively for the systems of continual or traditional extraction that work at a temperature below 27°C. What is "ACIDITY" ?

It is a chemical-physical parameter connected to the hydrolytic state of the oil that depends on the way the olive fruit has been harvested, the cultivar (or type of olive), the degree of ripening and the temperature at extraction.
